Meatloaf gets a bad reputation. It makes a great meal and pairs perfectly with everyone favorite comfort food side dishes. It is easy to make it just takes sometime to cook due to it being compressed into a pan.
1 lb of Ground Beef with Bacon (Regular ground beef, ground elk, or ground beef and sausage mix can also be used)
1 Onion diced and carmelized
2 pieces of Bread toasted and torn into small pieces
1 Egg
1 large handful of shredded Cheese approx 1 cup
1/2 teaspoon minced Garlic
1/2 teaspoon Garlic powder
1/2 teaspoon Montreal Steak seasoning
1/4 teaspoon Seasoning Salt
1/4 cup BBQ sauce
1 tablespoon Worcestershire sauce
Place all ingredients in a bowl. Mix together well. Put all the meat mixture into a loaf pan. Glaze with more BBQ sauce or Bacon Jam thinned with whiskey. Place in a preheated 375 degree oven and bake 45 or 60 minutes.
Cut in half to insure cooked all the way through the loaf. Serve hot with a side dish and vegetables.
