Brown Sugar Banana Bread with Rum Sauce

I made this recipe based off of a recipe created by my mother and aunt . I tweaked the recipe a bit. I think brown sugar blends well with bananas. It gives it a Bananas Foster flavor.


2 Eggs

3 Medium size overripe Bananas

1/3 Cup Vegetable Oil

2/3 Cup Brown Sugar

1/4 Teaspoon Salt

1 Teaspoon Cinnamon

1 Teaspoon Nutmeg (if you use organic nutmeg reduce to no more than ½ Teaspoon Nutmeg)

2 Teaspoons Baking Powder

1/4 Teaspoon Baking Soda

Optional: ½ cup of roughly chopped walnuts

1 Tablespoon per loaf of Brown Sugar

Makes 2 loaves


Preheat Oven to 350°. Place the eggs and oil in the mixer with the whisk attachment. Whip to create a fluffy emulsion (This is the key to moist banana bread.) Add brown sugar and salt mix until incorporated. The mixer will still be fluffy. Mash the bananas and add into the mixture along with Cinnamon and Nutmeg.


**Please be aware that Organic or Fresh Nutmeg is a lot stronger than nutmeg which has been in your pantry since you made your first pumpkin pie. If you have new Nutmeg or Organic you bread will taste medicinal if you use 1 Teaspoon reduce it to ½ to ¼ teaspoon. You can always taste and add more, but it is hard to subtract. **


Add flour and mix to incorporate. Grease 2 loaf pans. Optionally add walnuts to the batter.

My son has a slight allergy to walnuts. They cause cankers in his mouth. Because it is a mild allergy I can cook and use them in food, but to make it easier on him, I split the batter. Place some of the batter in the first loaf without nuts. Sprinkle 1 Tablespoon of Brown Sugar. It creates a yummy crust! In the mixing bowl, fold in the rough chopped walnuts to incorporate. Add the remaining batter in the other loaf pan. Add about 6 whole walnuts to the top and sprinkle the top with 1 Tablespoon of Brown Sugar.


Bake for 45 minutes. Check if the bread bounces back it is cooked. Depending on where you live and humidity in the air it could take 1 hour to cook.



Run a knife between the bread and pan. Turn bread out of pan and serve warm or to punch up the Banana’s Foster flavor of you can also add a rum glaze over the top.


Rum Sauce


Melt 3 Tablespoons of Butter in a pan. Add ½ Cup of Brown Sugar and 2 Tablespoons water. Bring to boil and reduce heat. Stir constantly for 2 minutes. When starting to get thick and bubbly remove from heat. Add 1 Tablespoon Rum. Stir until incorporated. Put it again on the stove until bubbly, stirring constantly for 1 minute. Remove and drizzle over hot over ice cream, Bananas, Banana Bread, Bread Pudding, Blonde brownie, or whatever you chose.
