I use this frosting on my Black Forest Cake. It is awesome because the gelatin helps it set well and stay in place.
1 pint or 2 cups Heavy Cream
2 teaspoons 1 package of unflavored Gelatin
2 Tablespoons and 2 teaspoons of cold water
1 cup Powdered Sugar
3 Tablespoons Dutched Cocoa Powder
Place cold water in bowl and sprinkle gelatin over it. Mix until incorporated. Let sit for 5 minutes to bloom. It will thicken.
While the gelatin is blooming pour the heavy cream, cocoa powder, powdered sugar, and vanilla in bowl ad use mixer with the whisk attachment or in. Once gelatin is bloomed, place bowl in microwave and heat until gelatin turns to liquid, about 10 seconds.
Slowly mix into cream mixture. Continue to whisk until it is stiff and peaks (keeping its shape.
Place in piping bag and put in refrigerator until ready to use.
