Christmas Prime Rib

As a tradition at our house my husband cooks Prime Rib and this year he perfected it.


Here is his recipe. (Serves 7 adults to 9 adults)


10 1/2 lbs Butcher pre-seasoned boneless Prime Rib


Preheat smoker to 250 degrees and cook for 3 - 4 hours to an internal temperature of 120. Remove from heat and wrap in foil and wax paper let rest for 30 minute.

Turn temperature up to 450 degrees. Return to smoker for 8 minutes on one side, Turn and cook other side for 7 minutes.

Remove from heat and wrap in foil and wax paper. Allow to rest for 30 minutes.


Serve.
