Fruits of Forest Pie

I discovered this pie years ago in the freezer section of the grocery store. It was a premium award winning pie and only lasted in the store for a couple years. I can no longer find it. I decided to make it. If you have never had it you should try it. It is the best pie out there!


1 cup apples, diced

1 cup raspberries

1 cup blackberries

1 cup blueberries

1 cup strawberries

optional 1/2 cup rhubarb

2 tablespoons lemon juice

1/4 cup white sugar

1/4 cup corn starch

Place all the fruit in a bowl along with lemon juice, sugar, and corn starch. Fold to coat. Roll out pie crust. Place bottom crust in pie pan. Add the prepared fruit and cover with top crust. Pinch crust together and cut vent holes. Place in 400 degree oven. Cover crust edges with pie shield (i use 2 inches of aluminum foil to keep from burning. Cook 20 minutes. Turn down to 350 degree and uncover crust edges. Bake 25 to 30 minutes until golden brown.


Let cool 10 minutes before serving.

Rhubarb is optional because it is hard to find and usually can only be found seasonally.
