Greek Salad

Traditional Greek Salad has no lettuce. It is fresh vegetables with a vinaigrette, feta, and olives. Just typing this makes my mouth water.

2 Tablespoons Red Wine Vinegar

2 Tablespoons Lemon Juice

3/4 Cup Extra Virgin Olive Oil

1/2 Teaspoon Oregano

1/2 Teaspoon Garlic Powder or 1 clove of minced fresh Garlic

1/2 Teaspoon Salt

1/4 Teaspoon Black Pepper

Optional to make a Creamy Sauce add 3 Tablespoons of Greek Yogurt.

Mix well and set a side.

If you don’t want to make your own Greek Vinaigrette you can use a store bought Vinaigrette.

1 Large Cucumber peeled, cut in half, de-seeded and diced

1 Medium Red Onion sliced

2 to 3 Roma Tomatoes, diced

2 to 3 ounces Feta Cheese, Crumbled

In a bowl place the diced cucumber, sliced onion, diced tomatoes, and feta cheese. Fold to disperse the ingredients evenly. Make sure to shake or stir the vinaigrette before pouring on the vegetable. Pour vinaigrette to coat vegetables and stir to coat evenly. Place an airtight lid and refrigerate until served.
