Hamburger pinwheels are easy and fast meal to make in a pinch or when you have just started cooking.
I rarely make these not because they aren’t great or that people don’t love them but because they were only cooked when my dad was out of town. This is the story behind hamburger pinwheels in my house growing up.
My parents met when my mother was still in high school and got engaged her senior year. After she graduated high school they got married. She was a young bride being 17 years old and was still developing her cooking skills. Apparently she cooked these weekly. One night my father came home and said something like “hamburger pinwheels again, is this the only thing you can cook?” Well that was the last time my mother ever cooked hamburger pinwheels for my father. We had them when my father was out of town. He even once or twice asked for them. My mother never gave in, never cooked them for him. If you ever wonder where my stubbornness came from then this story should clear it up.
1 lb ground Hamburger
1 Onion, Diced
4 large Mushrooms, Diced or 6 medium (optional)
1/2 teaspoon Garlic, minced
Salt & Pepper to taste
Cook the ground beef until browned and add onions, garlic, and mushrooms. Cook until all the vegetables are soft. Remove from heat.
Make a rolled biscuit dough from scratch, using a mix, or using store bought dough. I use my recipe.
2 1/2 cups flour
1/2 cup butter flavored shortening
1/2 teaspoon salt
1 teaspoon sugar
1 tablespoon baking powder
3/4 cup buttermilk
In a bowl add the dry ingredients and shortening. cut the shortening into the dry ingredients until pea size or smaller. Add the milk and create a ball. Roll out and fold over 2x and roll out again.
Roll out to 12 inches by 12 inches. Spread the hamburger on the biscuit dough. Roll like a cinnamon roll. Cut into 1 inch sections. Place on a cookie sheet. Bake in a preheated 450 degree oven for 15 - 20 minutes.
Serve hot with gravy.
