A good way to introduce healthy whole grains to you family is in the form of a muffin. A muffin is the perfect vehicle to introduce changes or new ideas to your family.
1/4 cup softened Butter
2/3 cup Brown Sugar
1/8 cup Honey
1 Egg
1 cup Buttermilk
1 cup Rolled Oats
1/2 cup White Flour
1/2 cup Whole Wheat Flour
1 tablespoon Baking Powder
1/2 teaspoon Salt
1/2 teaspoon Allspice
1/2 teaspoon Cinnamon
2 medium Bananas mashed
3/4 cup Walnuts optional
Cream butter, brown sugar, bananas, and eggs. Mix salt, baking powder, allspice, and cinnamon. Add flour, oats, and milk and stir until incorporated.
In a muffin pan lined with parchment liners fill the cups 2/3 full. Place in a preheated 400 degree oven for 20 to 25 minutes.
Notes: I add walnuts as I pour the batter that way I can make 50% with nuts and 50% without nuts.
