Home Bottled Apple Pie Filling

I grew up with my mom bottling all sorts of food during the harvest season one of my favorites has always been Apple Pie Filling. It makes it easy to make apple pie, apple cobblers, and apple crisp. The flavor of home bottled apple pie filling is fresh and totally different from the canned version you can buy at the store. Try this and you will never go back to grocery store cans.

48 - 60 Medium sized Apples I prefer Johnathan, MacIntosh, or Honey Crisp you can use any firm apples. A mix of apples usually give you a great flavor.

Peel, core, and cut up enough apples to fill 6 quart jars. Set apples in 3 tsp Salt and 2 quarts of water before draining and packing in bottles.

In a pot:

4 1/2 cups Sugar

1 cup Cornstarch

2 teaspoons Cinnamon

1/4 teaspoon Nutmeg

1 teaspoon Salt

Mix well to distribute the cornstarch into the sugar.

Add 10 cups Cold Water

Stir and place over medium heat. Cook stirring to make sure doesn't burn. Cook and stir until thick and bubbly. Remove from heat and stir in 3 Tablespoons of Lemon Juice. Poor over packed apple slices in quart jar leaving 1/2 head space. A bottle funnel makes it easier. Use a knife to get all the air out. Clean the mouth to make sure lids will seal. Place lids and collars.

In a water bath process for 30 minutes. Remove and let cool. Check to make sure sealed. Any pie filling not sealed can be stored in refrigerator and use within the week.

To use make a pie crust and pre bake it add the pie filling and finish with a streusel topping or pie crust topper.

This pie filling can also be used to bottle peaches.
