Institutional Peanut Butter Bars

The best peanut butter bars were made by institutions like schools, cafeteria, jails, etc until they all worried about making kids obese and the rules changed to where everything has to be low fat. Well some of us still loves these!!! They are a treat we serve up every once in a while. Yes they are packed with butter and sugar, but as long as you pace yourself and share there is nothing wrong with making these as a special dessert. They are delicious!!!!

I have been looking for the recipe for these Peanut Butter bars for a long time. They have been a close guarded secret, but this year Serving Time Cafe, a cafe next to the State Penitentiary closed. They released this recipe which brought back a memory of the school Peanut Butter bars. This is them!!!

1 1/2 Cups softened Butter

1 1/2 Cups Peanut Butter

1 1/2 Cups Brown Sugar

1 1/2 Cups Sugar

4 Eggs

1 Tablespoon Vanilla


Cream the above ingredients together.


Add the following ingredients into the creamed mixture.


1 teaspoon Salt

1 1/2 teaspoons Baking Soda

3 Cups Flour

3 Cups Oats


Spread mixture evenly into a cookie sheet. Preheat oven to 350 degrees and bake 15 - 25 minute. Remove from oven.

Spread a thin layer of peanut butter on the peanut butter bars. Let cool completely before adding frosting.


Frosting:


1 Cup softened Butter

1/2 Cup Cocoa Powder

4 Cups Powdered Sugar

1 1/2 teaspoons Vanilla

Milk to make correct consistency.


Spread on cooled bars and serve.
