King Arthur Blueberry Muffins

We have seen a post on Facebook posted by King Arthur Flour showing fantastic looking blueberry muffins. My family absolutely loves blueberries. I keep them in my refrigerator at all times. We decided to try this recipe to see if they are is as good as they look. The decision was YES they are as good as they look.


I only made a couple tweaks to suit my tastes. They are in the recipe below with (parenthesis). The original recipe can be found at www.kingarthurflour.com.


Blueberry Muffins from King Arthur Flour


½ cup Butter or 1 stick at room temperature

1 cup Sugar

2 large Eggs

1 teaspoons Vanilla (I add 2 teaspoons Bourbon Vanilla)

2 teaspoons Baking Powder

½ teaspoon Salt

2 cups flour

½ cup milk (I use 1/2 cup Sour milk)

2 ½ cup Blueberries (Fresh washed and slightly damp)

Top with white sugar approx. ¼ cup


Cream the Butter and Sugar together. Add the Eggs and mix. Add the vanilla and mix until combined. Add Flour, Baking Powder, and Salt (Make sure to sprinkle them around the bowl to keep from having lumps. Mix until starting to combine add milk and stir until just combined. Batter will be thick like cookie dough. Fold in the blueberries. Place into a muffin pan which is either greased or has muffin liners. Fill the muffin cups 2/3 full (I did to the top of the liner) top with sugar. Extra batter can be added to greased mini muffin pans.


Place in a preheated 375 degree for 25 -30 minutes. Bake and serve.
