Let celebrate Peanut Butter and Jelly day with Peanut Butter and Jelly Cookies

This is my Peanut Butter cookie recipe which is great plain, with chocolate pieces added when cooked, or with jelly.


It is National Peanut Butter and Jelly day so adding some jelly to the top is a great way to celebrate.


3/4 cup Shortening

1/4 cup Butter

1 cup Brown Sugar

1 cup White Sugar

2 Eggs

1 teaspoon Vanilla

1 cup Peanut Butter

2 1/2 cups Flour

2 teaspoons Baking Soda

1/2 teaspoon Salt


Cream shortening, butter, sugar, eggs, and vanilla together.

Add Peanut Butter and cream until incorporate. Add dry ingredients and finish mixing until all incorporated.


Preheat oven to 350 degrees.

Drop onto ungreased cookie sheet. Press dough with the back of fork to create a criss cross pattern. (Optional) To make Peanut Butter and Jelly cookies add about 1/2 teaspoon of your favorite jelly on top.

Place cookies in the oven for 10 minutes.


To make Peanut Butter cookies with chocolate on top make the cookies as above, but when fully cooked and removed from the oven to cool add a piece of chocolate. Allow to cool and then serve.
