Lite on fat, heavy on flavor Baked Potato Chowder

Everyone is always looking at ways to cut fat, carb, or calories but keep the flavor. Most times the flavor also goes. This recipe is definitely the exception to that rule. It is a warm, hearty soup that can be customized to everyone’s individual tastes. It is a baked potato bar in a bowl.


2 cup Potatoes, cut and chunked

1/2 cup Carrots, sliced

2 stalks Celery, sliced

1/2 medium Onion, minced

2 teaspoons Salt

2 cups Water (Make sure it covers the vegetables completely)

1/4 teaspoon paprika

1/4 teaspoon sage

1/4 teaspoon garlic

1/8 teaspoon pepper

1 cup Sour Cream (lite)

2 tablespoons Flour

1 cup 1% or 2% Milk


Combine potatoes, carrots, celery, onion, salt, and water. Boil in a covered pot until fork tender usually 10-15 minutes. Turn down to a simmer and add additional seasoning. In a bowl combine sour cream and flour. Stir until smooth. Add sour cream mix and milk to vegetables. Mix and cook until thickened.

Serve hot with bacon crumbles, green onions, and shredded cheese. Dish into bowls and allow each person to garnish as preferred.


Be aware if you do not garnish with bacon you will possibly need more salt and pepper.
