There are many recipes for Cowboy Cavier. Most have Italian Dressing or some variation. Mine is more simple it let's the fresh ingredients speak for themselves. It is basically a fancy salsa served with chips.
3 Ears of Corn, cooked and cut from the cob. Cool. I use the leftovers from the night before.
2 Ripe Avocados, diced
5 Roma Tomato, diced
4 Limes Juiced
1 can Black Beans, drained and rinsed
1 small Onion, diced
1 bunch Cilantro, chopped
1 teaspoon Garlic Powder
1 1/2 teaspoons Salt
Cut all the ingredients add in a bowl. Squeeze the lime over and season. Stir to incorporate and serve with chips.
