This cornbread goes great with every meal. This is a moist, flavorful, cake-like corn bread.
2 1/2 cups Buttermilk
1 cup Cornmeal
1/2 cup Sugar
1/4 cup Honey
4 Eggs
3 cups Flour
2 tablespoons Corn Starch
2 teaspoons Baking Powder
1/2 teaspoon Salt
1/2 cup plus 2 tablespoons Butter
1/2 cup Vegetable Oil
Preheat oven to 400 degrees. Place a 12 inch Dutch Oven pan or Dutch Oven Skillet in the oven with 2 Tablespoons of Butter.
In a bowl place Buttermilk or Sour Milk in a bowl. Add cornmeal to the bowl along with sugar, honey, and eggs. Mix together and set aside.
In a separate bowl, flour, Baking Powder, Corn Starch, and Salt. Stir dry ingredients together.
Add the wet ingredients into dry ingredients bowl. Mix. Stir in 1/2 cup oil and 1/2 cup melted butter into batter.
Remove skillet from oven and pour cornbread batter into hot skillet. Fill pan 2/3 full. Place back in oven and bake for 22 - 25 minutes.
Serve hot with honey and butter.
This batter can also be used to dip hot dogs in and fry (Corn dogs).
