Mom’s Date Chews

My mom’s favorite Christmas candy was not chocolate, peppermint, or caramel. These candies dominated the Christmas season. In a world of decadent treats the old fashion fruited candies often are forgotten.

My mother loved the old fashioned flavors and her favorite homemade candy were dates chews.

They are full of deep, earthy, rich flavors they have deep molasses notes covered in coconut. We are so used to everything being covered in chocolate I know we forget that once upon a time all the treats and flavors of the season were once nuts, spices, and candied fruits.

I remember making fruitcakes and nut laden treats with my grandmother.

Date Chews are a simple candy to make. Just make sure to use fresh ingredient. Simple treat need great ingredients!

1 Cup chopped Dates

3/4 Cup White Sugar

3 Eggs - beaten well

1 tsp Vanilla

2 Cups Rice Krispies

1 Cup chopped Pecans

2 Cups shredded and sweetened Coconut

Add the chopped dates, sugar, eggs, and vanilla all into a heavy saucepan. Cook over medium heat. Stirring until the mixture thickens, about 5 minute.

Remove from heat and add the Rice Krispies and Pecans. Incorporate into the sauce.

Place 1 cup of coconut in a shallow cake pan. Drop teaspoons of the mixture into the coconut flakes and roll until coated and into a ball shape. Set to the side. Continue dropping and rolling until the mixture is out of the pan.

Serve the treats. Store in an airtight container.
