My favorite candy is English Toffee and Christmas isn’t Christmas without it. It has a warm buttery flavor and of course we can‘t miss the chocolate topping.

2 Cups Butter

2 Cups Sugar

1/2 Cup Water

1/2 teaspoon Salt

1 teaspoon Vanilla

A cake or cookie sheet depending on how thick you like your toffee

1 bag Semi Sweet Chocolate Chips or you favorite.

optional add chopped almonds on top of the chocolate or whole almonds to the toffee.

Place Butter, Sugar, Water, and Salt in a pot. Stir in one direction while cooking. Boil until the toffee browns and reaches 300 degrees Fahrenheit. Turn off the heat and add 1 teaspoon Vanilla. Stir until incorporated and pour candy into an unprepared pan. Remember this candy is extremely hot and will continue to cook a little bit in the pan so be careful and it will darken in color slightly. Spread and let cool until starts to set. While still warm pour 1 bag of chocolate chips over candy. Cover with foil or another pan. Let sit 1 - 2 minutes. Remove cover and spread chocolate evenly. Let cool. Break into set pieces and serve.
