My Zucchini Bread Recipe

The original recipe on this site is my mom's and aunt's recipe. It is wonderful, light, and flavorful. I have made a few adjustments to the recipe to my taste.


This recipe has more depth by adding brown sugar and moistness by adding honey.


2 Cups shredded Zucchini, leave the skin on.

3 Eggs beaten until light

3/4 Cups White Sugar

3/4 Cup Brown Sugar

3/4 Cup Oil

3 tsp Vanilla

1 teaspoon Baking Powder

1 teaspoon Baking Soda

1 teaspoon Salt

2 teaspoons Cinnamon

1/2 teaspoon Nutmeg

2 1/2 Cups Flour


1/8 Cup Honey


Preheat Traeger smoker to 350 degrees.


Using a mixer with a whisk add the eggs, oil, and sugar. Whisk to create a emulsion. When the emulsion is created continue to whisk adding baking powder, baking soda, salt, cinnamon, and nutmeg. Switch from whisk to regular beater. Add flour and mix into emulsion along with zucchini and vanilla. Make sure all ingredients are fully incorporated.


Mix in honey folding it in before placing in pans.


Place batter in two greased and sugared loaf pans.

Bake for 45 - 60 minute, until toothpick comes back clean or bounces back.


Serve warms.
