Patience Pays; Homemade Chicken Pot Pies

My husbands favorite meal is pot pie. I haven’t made them before because they take so long to cook that it takes so much time to cook, however they are definitely worth it!


This recipe will make 6 little pot pies In aluminum tins. To make one large pie use this recipe, but only make 1 double pie crust and increase backing time to 1 1/2 hours.

Filling:


3 Boneless Chicken Breasts approximately 1 1/2 lbs. seasoned with Greek seasoning (Salt, Pepper, Garlic) and grilled. Cube once cooked. You can also use canned, baked, pan fried or rotisserie chicken.

1 Onion diced and caramelize in 1 teaspoon of Butter

1 cup of sliced raw carrots

2 Celery stalks sliced

1 small container of Mushrooms sliced

2 small zucchini sliced

(all vegetables above can be substituted for a bag of frozen vegetables except the Onion)

1 teaspoon Garlic

1/4 teaspoons dried Rosemary or 1/2 teaspoons fresh minced

1/8 teaspoon Poultry Seasoning

1/4 teaspoons Fresh Ground Pepper

1/4 teaspoons Salt

2 cans Cream of Chicken soup (98%Fat Free)

1/4 cup Water


In a deep pan or pot start by caramelizing the diced onions in butter. After the onion is a nice color add the other vegetables and seasonings. Cover the pot stirring occasionally until the vegetables begin to soften.


While vegetables are cooking prepare pie crusts. See below.


Add the cook and diced chicken along with the two cans of Cream of Chicken condensed soup and water. Stir well and turn filling off once it has come to a boil.

Pie crusts

Place pie crust in individual tins. Once filling cooked place enough filling to fill the pie crust. Place the top crust, crimp, and cut vent slots.


Preheat oven to 375 degree. Cover the crust edge with aluminum foil and place in oven for 15 minutes. Remove the aluminum foil and place back in the oven for additional 15 minute. Increase the heat to 400 degrees and back for an additional 15 minutes to finish. Remove from oven and serve.

Caution they will be ho so let cool before serving to children.

Remove from oven and serve.
