You can also make the all the ingredients from scratch for a large group of friends. This is an easy recipe to scale up or down as needed. This is a great recipe to use on leftovers from a BBQ.

This recipe will make 4 tacos for adults or six tacos for kids.

Shopping List

1 package pulled pork approx 1 pound

There are several good brands in the meat/deli section which take less than 3 minutes to heat in the microwave. You can also reheat leftovers in a cast iron pan on the stove, on leftovers add additional BBQ sauce. The pulled pork needs to have a lot of flavor to make it stand out.

1 package of prepackage, shredded Cole Slaw mix from the produce section in the store.

1 Bottle of Creamy Lime Cilantro Salad Dressing. You could also use regular Cole Slaw dressing

1 bunch of Cilantro, washed and prepared.

Sour Cream

Shredded Cheddar Cheese

Pico De Gallo or Salsa or Hot Sauce

Flour Tortilla shells

Start by preparing the Cole Slaw. Add half the bag into a bowl along with about 1/4 of a cup of dressing. Taste and add more if needed. It should look and taste creamy.

Next warm the Pulled Pork following the directions on the package. Remove from heat.

Warm your flour Tortilla. You can use a microwave and two plates, a Tortillas warmer, heat in the oven.

Place a warmed Tortilla on a plate. Smear 1 tsp of sour cream down the middle of the Tortilla. Add 1/4 of the warmed pulled pork. Layer Cole Slaw, Cheese, Pico De Gallo, and Cilantro. Roll and serve.

Can be be served with chips, salsa, and guacamole, beans or tater tots and fries.

Enjoy!!
