Returning to my roots my new cooking mindset

My mindset has changed back to where it should have been all along. I have been used to the easy answer if I want to make something the grocery store is right down the street go pick it up if I run out. This is convenience cooking.

This is not how I grew up. I grew up in a little community just east of Ogden, Utah in Ogden Valley. Most of my life was spent cooking food with what we had on hand. If we didn’t have it then you changed what you were cooking or ran next store to grandmas to grab an egg.


Eden had a small General Store which we rarely shopped because having 7 kids and 2 adults we shopped once a month and filled 2 carts down in Ogden where food cost less. The big super store were 30 - 45 minutes from our house.


To decide what to cook for dinner we would look at the refrigerator and pantry to see what we had, what was close to spoiling, and what was in the garden.


As I look at my refrigerator today, I see strawberries which are starting to get squishy along with blueberries. They still are good but not probably the best to eat raw. Last month I probably would have tossed them but today I will make a pie.


As I look in the pantry I am now looking for cans close to going out of date and other mixes to use rather than throw away and re-buy. This is the Habit I should have maintained from my childhood which I let slip for convenience.


Some good things are coming out of 2020. Maybe this is a time we will learn some lessons we can take forward. We need to take the healthy habits and replace old ones. No more convenient cooking and continue to move forward.


Look for expiration dates and use it. Use leftovers. Plan meals around what you have on hand. Plant a garden.
