When say Brownies they automatically think of a dense, thick, gooey or cakey chocolate square. I love brownies but did you know that Blondies are the Vanilla version of a brownie? They are even more versatile as the chocolate version. Also for people who don’t like chocolate ( I know right, who doesn’t like chocolate. They do exist even though they are definitely the minority) a Blondie is a special treat.
This is a Cakey Brownie!!
1/2 cup Butter, one stick
1 1/2 cups Brown Sugar
1 cup Flour
1 tablespoon Corn Starch
1/2 teaspoon Baking Soda
1/4 teaspoon Baking Powder
A pinch of Salt
2 Eggs
1 tablespoon Vanilla
8 ounces Butterscotch Chips
Preheat oven to 350 degrees.
In a pot, melt the butter and add the brown sugar. Mix until smooth and incorporate. Remove from heat.
In a separate bowl add flour, corn starch, baking powder, baking soda, and salt. Pour butter and sugar mixture over and stir. It will be thick. Add one egg at a time stirring constantly. Add the Vanilla at the end Along with butterscotch chips.
Grease a 8x8 pan. Pour batter in and smooth to an even distributed in the pan.
Bake 25 minutes.
