This is one of our comfort foods. It is hearty, flavorful, and filling. It is an Irish recipe adapted to America style food. It is easy to make and has great flavors.
1 lb Ground Beef
1/2 a small Zucchini diced
1/2 a small Yellow Summer Squash diced
1 container sliced White Button Mushrooms
1 Onion diced
4 stalks of celery sliced
1 teaspoon minced garlic
1 1/2 cups Carrots
1 bag frozen Green Beans
1 bottle of Guinness
1/2 teaspoon Garlic Powder
Fresh Ground Pepper
2 packages of Brown Gravy
1/4 teaspoon Tarragon
2 Bay leaves
3 cups Irish Cheddar or Medium Cheddar
In a pot cook the diced onions until caramelized. After onions are caramelized add the other diced vegetables and cook until soft. In a separate pan cook the ground beef and drain the fat. Season the meat with pepper, garlic, and tarragon then add to the vegetables along with 3 cups water and 1 bottle of Guinness. Add two Bay leaves. Mix the two brown gravy mixes and simmer until thick. Remove Bay leaves before next step.
Drop spoonfuls of mash potatoes on top of gravy mixture until covered and sealed. Cover with shredded cheese and cover the pot. Simmer on low until cheese is melted.
