Stove top Mac n’ Cheese

Sometimes you run out of the box kind and need to make it in the stove top as a side for a quick meal.


8 ounces of elbow macaroni

1/4 cup butter

¼ cup all-purpose flour

1 tsp prepared mustard

1/2 teaspoon salt

Ground pepper to taste

1 1/2 cups milk

1/2 cup pasta water

1 1/2 cups shredded Medium or Sharp Cheddar Cheese

1/4 cup shaved or grated real Parmesan Cheese


Cook the macaroni in salted water until al dente. Usually about 9 minutes in boiling water.


Create your roux by melting 1/4 cup of butter and sprinkling 1/4 cup flour. Cook until it begins to turn brown. Add pasta water and milk to stop browning process and whisk until smooth. Reduce heat and add seasoning. As it begins to thicken add the cheese. Once thick, bubbling. And cheese is melted add the pasta that has been drained..


Stir in completely and serve hot.
