Substitution can save the day!!!

Ahhhhh!!! I ran out of ________ in the middle of cooking!!! What can you do to save the meal?? The super stars of the kitchen are simple items which can save the day.


Buttermilk 1 cup substitution = 1 Tablespoon apple cider vinegar or lemon juice then finish with milk to create 1 cup of sour milk. Let sit for 5 minutes before using.

Benefit - you can use lower fat milk to reduce the fat in your recipe.


Corn Starch 1 Tablespoon substitution = 2 Tablespoons Flour


Flour 2 Tablespoons substitution = 1 1/4 Tablespoons Corn Starch

Benefit - can be used to create gluten free recipes.


Sugar 1 cup substitution = 3/4 to 1 cup Molasses or 1/2 cup Honey


Baking Powder 1 teaspoon substitution = 1/4 teaspoon Baking Soda and 1/2 teaspoon Cream of Tartar.


Milk 1 cup substitution = 1/4 cup of yogurt or sour cream 3/4 cup water or 1/2 cup evaporated milk and 1/2 cup water or 1 cup milk and 1/3 cup dried milk.


Egg 1 substitution = 1-1/2 tablespoons vegetable oil mixed with 1-1/2 tablespoons water and 1 teaspoon baking powder per egg or 1/4 cup unsweetened applesauce (this is great as a binder, but does not help in leavening your back goods).


Butter 1 cup substitution = 3/4 cup vegetable oil (caution this does not work for recipes that require cold butter) or 1 cup margarine or 1 cup shortening.


Crumbs 1/4 cup dry substitution = 3/4 cup toasted bread crumbled or 1/4 crushed saltine cracker or 1/4 crushed corn flakes.


Heavy Cream 1 cup substitution = 3/4 cup milk and 1/3 cup butter.


Spices


Allspice 1 teaspoon substitution = 1/2 teaspoon cinnamon and 1/2 teaspoon cloves,


Apple Pie Spice 1 teaspoon substitution = 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1/8 teaspoon cardamon.


Unsweetened Chocolate 1 ounce substitution = 3 Tablespoon Cocoa and 1 Tablespoon oil


Pumpkin Pie Spice 1 teaspoon substitution = 1/2 teaspoon cinnamon, 1/4 teaspoon ginger, 1/8 allspice, and 1/8 nutmeg.
