Corned Beef is a very cheap cut of meat that must be cooked for a long period of time to become wonderful. Like other Irish meals it is a simple meal cooked with root and winter vegetable. The dinner of peasants has become the food for kings.
3 lbs of Corned Beef
1 bottle Guinness Stout
1 bottle Water
2 Bay Leaves
3/4 Head of Cabbage
1 1/4 lbs fingerling Potatoes
3/4 lbs Carrots
In a large Dutch oven pot place the corned beef, seasoning packet, 2 bay leaves, bottle of Guinness and bottle of water. Cook on medium to medium low heat for 2 1/2 hours. Check every so often to make sure liquid has not evaporated.
After 2 1/2 hours add potatoes, cabbage, and carrots. Cover and cook for an additional 1/2 hour. Serve vegetables along with meat (cut or pulled).
