“Upper class” Irish Soda Bread

Irish Soda Bread is a a dense bread which is raised using Baking Soda instead of yeast. It is made with simple ingredients and has become synonymous with the Irish and St. Patrick’s Day. The simple ingredients made it so the Irish could cook and eat during the time of famine. My brother called this “upper class soda bread“ because Irish would not have made it this way due to the expensive ingredient of cheese that I add, however it does taste wonderful.


Irish Soda Bread is made using simple ingredients and is easy to make.


4 cups Flour

1 1/2 teaspoons Salt

1 teaspoon Baking Soda

1/2 teaspoon Garlic Powder

4 Tablespoons Butter

1 1/2 Sour Milk

1 Egg

2 Green Onions, chopped greens and all

1 1/4 Irish Cheddar, grated

Preheat oven to 350 degrees.


In a bowl added flour, baking soda, salt, and garlic powder. Cut cold butter into mixed dry ingredients. Mix sour milk and eggs add into dry ingredients and mix. Mix in 1 cup cheddar and green onions.

Knead into a ball on a floured surface. Create a ball and place on parchment. Cut the ball with a cross or star pattern 1/3 of the way. Put the additional 1/4 cup of grated cheese on top. Bake for for 50 - 60 minutes.

ThIs break cooks best on a cast iron pizza pan. Allow the pan to pre-heat in over and melt a pat of butter in the center of pan prior to opening the oven and placing the soda bread in the middle.


To make traditional Irish Soda bread follow the same recipe but add 2 cups wheat flour and 2 cups white flour also don’t add butter, egg, garlic powder, cheese, or green onions.

It is a truly simple bread.
