Western Style Chicken n’ Dumplings

If you are from the Eastern or Southern United States then these are not the Chicken and Dumplings you know. If you are from the Western United States then this is your comfort food.

Western style chicken and dumplings are a chicken and vegetable sauce cooked with a drop biscuit covering. They can be cooked completely in a pot or transferred to a casserole dish. If cooked in a casserole dish the light and fluffy drop biscuits come out crispy on top.


1 Onion sliced thin

1/2 teaspoon minced Garlic

1/2 lb Baby Carrots sliced about 1 cup

1 1/2 large stalks of Celery or 2 smaller stalks sliced

1 cup Green Beans

1 Bay Leaf

Fresh Ground Pepper to taste

1/2 teaspoon Salt

1/4 teaspoon Garlic

1/4 teaspoon Poultry Seasoning

1 tablespoon White Cooking Wine

1 lb Chicken (I use grilled chicken breast)

2 Knorr Chicken Bouillon cube

4 cups Water

2 tablespoon Corn Starch with 1 tablespoon Water to make slurry


Drop biscuit topping


2 cups Flour

1 tablespoon Baking Powder

1/2 teaspoon Sugar

1/4 teaspoon Cream of Tartar

1/4 teaspoon Salt

1/2 cup Shortening (Butter flavored)

1/4 teaspoon Garlic

1/8 teaspoon Thyme

1/4 cup Parmesan Cheese

1 cup Milk


In a pot caramelize the onions and garlic in butter. Add celery, carrots, bay leaf, and green beans. Stir adding Cooking wine for additional moisture. Season with pepper, salt, garlic, and poultry seasoning. Add water and chicken bouillon. Boil until all the vegetables are tender. Add chicken and warm bring to a boil. Add corn starch slurry to thicken.


Make the drop biscuit topping by placing all the dry ingredients in a bowl and cutting the shortening into the dry ingredients. Once the Shortening has been cut into the mixture add the milk. Mix it together. Place the drop biscuits in a layer on top. Cover with a lid if it is in a pot or with aluminum foil in a casserole dish cook 20 minutes on simmer or 375 in oven. Remove foil if in oven and cook 10 minutes longer to crisp.


If you double the recipe you can put half in a casserole dish and freeze. Thaw before cooking and bake cover in 375 degree oven for 30 minutes.


Place white rice in the bowl before serving. Dish the Chicken and Dumplings over the rice. Serve hot.
